Red Cabbage and Apple Salad withe Sesame Seeds Vinaigrette

This raw salad will be sure to impress any guests and it is so easy to make! The perfect appetizer for a special dinner, full of great nutrients, not only is it good food, but it’s good for you too! This recipe serves about 4.

Ingredients for vinaigrette

3 Tbs apple cider vinegar

1 tsp grated peeled ginger

1 tsp dijon mustard

1 tsp honey

1/2 tsp minced garlic

3 Tbs olive oil

salt and pepper to taste

Preparation for vinaigrette

Mix together vinegar, ginger, mustard, honey and garlic. Whisk in olive oil to make an emulsion. Add salt and pepper to taste.

Ingredients for salad

2 cups shredded red cabbage

2 cups shredded napa cabbage

2 cups thinly sliced granny smith apples

2 tsp fresh lemon juice

1/4 cup golden raisins plumped in warm water

1/4 cup toasted sesame seeds

Preparation for salad

Toss apple sliced with lemon juice to prevent browning. Toss cabbages together in a large serving bowl. Drain raisins. Add apple, raisins and half the sesame seeds. Toss with dressing. Garnish servings with remains sesame seeds.
